• 2 large flour tortillas • ½ cup Dairy Isle cheddar cheese, grated • Salsa, sour cream and guacamole - optional
Heat a sauté pan over medium-high heat; add oil. Cook pepper for 4 to 5 minutes until softened & lightly browned. Add lobster and green onions and cook for 1 minute or until lobster is heated through. Remove pan from heat. Top each tortilla with half of the lobster mixture and cheese; fold in half. One at a time, return quesadillas to sauté pan over medium-low heat and cook for 2-3 minutes on each side or until golden brown, slightly crispy, and the filling is hot. Cut into thirds and serve with salsa, sour cream, and/or guacamole. Makes 2 servings. *About 1 cup of cooked lobster meat Courtesy of Lobster Prince Edward Island
